This is my favorite recipe to make during the week when I’m too tired to plan and prep a large meal. It’s quick, simple, and very easy.
Prep time: 10 minutes
Cook time: 5 minutes
Ingredients:
- Pack of flour or corn tortillas
- Rotisserie chicken
- 1/2 cup Shredded cheese of choice (I use mild cheddar)
- 4 – 5 slices of bacon
- Ranch dressing
For this recipe, I use the rotisserie chicken that’s sold at the local grocery store deli. To start, begin pulling the chicken off the bone and place in a separate bowl. Shred with two forks. Add in shredded cheese, crumbled bacon bits, and ranch. Mix together well.
Place the mixture onto one tortilla and spread evenly. Top with another tortilla. Spray a saucepan with olive oil or butter spray and set to medium/high heat. Let each side of the quesadilla brown for 3-5 minutes. Remove from saucepan and cut into fourths.
This is one of our all-time favorite recipes. My husband loves it because it includes 4 of his favorite ingredients, and I love it because it only takes a few minutes to prep and cook. This can be very filling, so I usually serve by itself or with some seasoned rice.
