This is my favorite seasonal dish to make. Every fall and winter I bust out the cupcake tins and make this. This soul food recipe is super easy and perfect for any chilly night.
Prep time: 15 minutes
Cook time: 20 – 25 minutes
Ingredients:
- Canned biscuits (2 cans of 6)
- 1 large can Heinz homestyle chicken gravy (or 2 small)
- 1 can mixed vegetables
- 2/3 can cream of chicken
- 2 cans chunk chicken breast (drain each can before adding)
To start, preheat your oven to 375 degrees. In a large mixing bowl, mix together drained chunk chicken, cream of chicken, mixed vegetables, and chicken gravy. Set aside.
Spray your cupcake pans with olive oil spray or butter spray (I use butter spray). Lay out each biscuit and roll out flat. Stretch each biscuit some to fit in the pan. Set each biscuit on the holes and form to the pan, creating a cupcake mold. Leave some excess on the top to keep from spilling the mixture. Fill each biscuit with the mixture.
Set in the oven for 20 – 25 minutes, or until the biscuit is cooked and brown. Serve and enjoy.
