Chicken Burritos

As I mentioned in a previous recipe, I do not prefer beef. I typically cook with a lot of chicken, so I have a lot of chicken recipes up my sleeve. This burrito is one of my faves (which I say a lot, but all my recipes are my favorite). It’s easy and can be frozen to reheat for later.

Prep time: 10 minutes

Cook time: 20 minutes

Ingredients for chicken filling:

  • 1lb skinless & boneless chicken breasts (cut into small pieces)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon chili powder, cumin, smoked paprika, & dried oregano
  • 2 tablespoons olive oil
  • 1 small onion (chopped)
  • 3 cloves garlic (minced)
  • 1 medium red bell pepper (chopped)
  • 1 1/2 cup refried beans
  • 1/4 cup water

Ingredients for burritos:

  • 8 large flour tortillas
  • 2 cups mexican rice
  • 1 cup corn (canned)
  • 2 cups shredded cheddar cheese
  • (optional) salsa, sour cream, & nacho cheese sauce

Begin by making the filling. Heat olive oil in a large skillet. Season the chicken breasts with salt, pepper, chili powder, cumin, smoked paprika, and dried oregano. Add the chicken to the skillet and cook on medium/high heat for 2 – 3 minutes or until the chicken is cooked through.

Add the onion, garlic, and bell pepper to the skillet. Cook until the onion is brown. Add in the refried beans and water and stir everything together. Cook for a couple minutes until the mixture reduces slightly.

Warm the tortillas in the microwave for about 30 seconds. To assemble the burrito, lay out the tortilla, spread the rice, chicken filling, corn and cheese. Fold them burrito style.

To toast, you can place them in the oven for 10 minutes at 350 degrees while wrapped in foil, or fry them in the saucepan on medium/high heat for 2 minutes per side until the burrito is crispy.
