Stir Fry Chicken Teriyaki

I have tried plenty of teriyaki recipes but this one reigns as my favorite. This style of cooking is my favorite. This recipe gives me the feelings of an oriental restaraunt without having to actually eat out. This is one of my household favorites.

Ingredients for chicken:

  • 2 boneless & skinless chicken breasts (or 4 – 6 chicken tenderloins)
  • 1 teaspoon garlic powder
  • 3 tablespoons cornstarch & olive oil
  • 1/2 medium onion (chopped)
  • 2 cups broccoli (I use frozen)
  • 1/2 red bell pepper
  • 1 cup uncooked rice
  • pepper to taste (the soy sauce is going to be salty so do not add any extra salt)

Ingredients for teriyaki sauce:

  • 1/2 cup chicken broth
  • 3 tablespoons mirin (I use the Walmart brand)
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar (apple cider vinegar will work too) & fresh ginger (I skip this ingredient)
  • 1/4 cup brown sugar (packed)
  • 1 tablespoon cornstarch
  • 2 cloves minced garlic

Cook the rice to your liking beforehand. Chop your vegetables into bite-sized pieces. Whisk together all the ingredients for the teriyaki sauce in a separate bowl and set aside. Cut your chicken into 1″ cubes and add them to a bowl. Mix in your garlic powder and pepper. Add in the cornstarch until all is evenly coated.

Add your olive oil to a medium saucepan on medium/high heat. Add your chicken into the pan (I usually do 2 batches to make sure the chicken is all well cooked). Cook for 4 minutes on each side. Once the chicken is finished, set aside and add the onions, bell peppers, and broccoli (add some more olive oil as needed) to the saucepan. Cook for 4 – 5 minutes, or until the texture is to your liking.

Add the chicken back into the pan with the vegetables and begin stirring in the sauce. Allow the sauce to bubble and thicken, which should only take 1 – 2 minutes. Continuously stir throughout this process. Remove and serve with rice.
