Quick and Easy Breakfast Sandwiches

I meal prep these often for my husband and I. These are a quick and easy option for breakfast. It saves us time in the mornings as well as money from eating out for breakfast! I prep 12 of these at a time, however this recipe will include only enough ingredients for 6 sandwiches. Multiply as needed.

Prep time: 10 minutes

Cook time: 15 minutes

Ingredients:

  • 6 pack Thomas’ English Muffins (I buy regular for my husband and the blueberry for myself)
  • 6 pieces Swaggerty’s Premium Sausage
  • 6 eggs
  • 6 slices cheese (I have used Swiss and American, just preference)
  • 1 pack Oscar Mayer precooked bacon (easier cleanup)

Begin by cooking the sausage since this will take the longest. I try to set 4-6 pieces in the pan at a time. Set aside. For the eggs, I use a stainless steel ring to form circled egg shapes to fit perfectly on the sandwich. I spray the ring with olive oil/butter spray to make sure the egg does not stick to it. Cook each egg individually as the sausage cooks.

After the eggs and sausage have finished cooking, heat the bacon in the microwave per the directions on the box. While this is heating, take each muffin and slice in half (this brand is already pre-cut mostly, so it is easier). Assemble the sandwiches with one egg round, one sausage patty, one slice of cheese, and 1 1/2 pieces of bacon that is broken in half.

To preserve, take each sandwich and wrap tightly in saran rap. I typically leave a few in the fridge and place the rest in the freezer to ensure they will not go bad before we can eat them. Heat these in the microwave for 30 seconds to eat. If frozen, heat in the microwave for 1 – 1 1/2 minutes.
