I pretty much created this recipe from a compilation of several different recipes I found on Pinterest. I played around with this recipe a lot, so don’t feel pressured to get it perfect! I even added a special little fall touch since we are approaching the season, and I love it.

Cook time: 20 minutes
Ingredients:
- 1 lb ground beef
- 1 pack taco seasoning (I used McCormick)
- 4 large bell peppers (any color)
- half an onion
- 1 tbsp minced garlic
- 1 bag Mexican rice (I only had Knorr rice on hand)
- 1/2 cup beef broth
- 1/2 cup water
- shredded cheese (measure with your heart, I didn’t measure)
- salt & pepper to taste
To begin, preheat your oven to 400 degrees. As the oven is heating, cut the tops off your bell peppers and cut out the insides. Save the tops for later.
Once heated, place the bell peppers onto a baking sheet and place in the oven for 10 minutes.
Cook the ground beef until all the pink is gone. Drain the grease and add the taco seasoning. The McCormick packet called for 2/3 cups of water, however, I added 1/2 cup beef broth and 1/2 water. Bring to a boil and then simmer for 5-7 minutes.
Dump the rice into a pot and cook accordingly (the packet that I used required 2 tbsp butter and 2 cups water). Bring to a boil and then let simmer for 7-9 minutes.
Take the tops of the bell peppers from earlier and chop finely. Then, chop the 1/2 onion finely. Add the chopped onion, bell pepper, and minced garlic to a separate pan and sauté. Once finished, add to the beef and mix together.
Remove the bell peppers from the oven and assemble. You can either mix the rice and beef together, however I added the beef first and then the rice. Whichever way you choose, top with shredded cheese and place back in the oven for another 10 minutes or until the cheese is melted.
This recipe is so easy to make. A few that I read added diced tomatoes, green chiles, and even a can of Rotel, however I chose to opt out of those ingredients and leave it simple.
After the peppers were finished, I let them cool and cut out pumpkin faces! This was so much fun and turned out adorable. Totally not necessary, but was such a cute little touch.
