This is yet another recipe I found on Tik Tok. I had never made homemade chicken sandwiches until now, and I don’t think I’ll ever buy store-bought again. Plus, it’s made in the air fryer, so no grease or extreme mess to clean up!

Cook time: 15 minutes
Ingredients for the chicken:
- 2 boneless and skinless chicken breasts (flattened and cut in half)
- 1 egg
- 1 tsp hot sauce (I used Texas Pete)
- 1 tsp garlic, onion, and chili powder, and smoked paprika
- salt and pepper to taste
- 2 cups Kellogg’s honey flavored cornflakes, crushed (the honey flavored cornflakes are optional, but they do give the sweet taste to the sandwiches)
- 4 slices of cheese (I used American but Provolone would’ve been the best, just preference)
- lettuce
- pickle slices
- hamburger buns
Ingredients for the sauce:
- 1/3 cup mayo
- 1 tbsp hot sauce (reduce for less spicy)
- 1 tsp of pickle juice (you can use apple cider vinegar if you opt out of the pickles)
- 1/2 tsp smoked paprika and minced garlic
Begin by flattening the chicken breasts with a meat tenderizer. Once I did this, the breasts were too long, so I cut them in half, giving me 4 separate pieces. Season the chicken with the garlic powder, onion powder, chili powder, smoked paprika, salt and pepper. Crush the honey flavored cornflakes and set aside on a plate. In a bowl, whisk together the egg and hot sauce. Dip each chicken breast into the egg wash and then into the plate of crushed cornflakes. Rub around to ensure they are evenly coated.
Next, preheat your air fryer to 365 for 15 minutes (may take less/longer depending how thick the pieces of chicken are and how many pieces you have). Place the chicken in the air fryer and let cook.
While the chicken is cooking, make the sauce by combining all the ingredients into a bowl and whisking. Mix until completely combined. Set aside. Brown your hamburger buns while waiting.
Once the chicken is finished, place a slice of cheese on each piece and place back into the air fryer just long enough for the cheese to melt. Spread the sauce on each side of the buns and place chicken inside. Assemble with pickle slices and lettuce. Serve.
