My husband has requested pumpkin pie for several weeks now, but I didn’t want to fully indulge in all the pumpkin desserts until it was officially fall. Well, in the midst of a routine grocery trip a few days ago, I decided I would grab the ingredients for pumpkin pie to make since fall officially began this past Saturday. This is the first recipe I came across on Pinterest in the midst of my rush, but it turned out to be a delicious and super easy recipe!

Cook time: 50-55 minutes
Ingredients:
- 1 10″ pie crust (I opted for the pre-made because I didn’t have time to search for a homemade recipe or the ingredients, but I will include an easy recipe for a homemade crust that I found afterward at the end)
- 3/4 cup granulated sugar
- 1/2 tsp kosher salt
- 2 tbsp pumpkin pie spice (if you don’t have this, substitute with 2 tsp cinnamon, 1 tsp ground ginger, and 1/2 tsp ground cloves – it will taste the same)
- 2 large eggs
- 1 can pumpkin pureé (15 oz)
- 1 can evaporated milk (12 oz)
Begin by preheating your oven to 425 degrees. In a large mixing bowl, whisk together sugar, salt, pumpkin pie spice (or cinnamon, ground ginger, and ground cloves), and the eggs. Whisk until combined.
Next, add in the pumpkin pureé and evaporated milk. Whisk together well until combined. Pour this mixture into the pie crust and bake at 425 for 15 minutes.
After 15 minutes, remove the pie from the oven and lower the temperature to 350 degrees. Cover the pie crust edges with foil or a pie shield. Place back in the oven for an additional 50-55 minutes or until an inserted toothpick comes out clean.
Refrigerate until ready to serve.
Additional: drizzle with salted caramel syrup and top with whipped cream for the full effect.
Optional Pie Crust
Prep time: 20 minutes
Cook time: 1 hour
Ingredients:
- 2 1/2 cups all-purpose flour
- 1/2 tsp salt
- 3/4 cup cold unsalted butter – cubed
- 1 tsp apple cider vinegar
- 1/2 cup ice-cold water
In a large mixing bowl, mix together flour and salt. Add the butter and blend with your hands or pastry blenders. You will end up with a bowl full of crumbs.
In a measuring cup, mix together apple cider vinegar and water. Slowly pour this mixture over the dry ingredients and mix together until it creates a dough. Push into a ball – do not knead or overwork. Cut into 2 disks, wrap in foil, and chill for 1 hour.
Place 1 disk of the dough between 2 sheets of parchment paper. Roll into a circle that is slightly larger than a 9″ pie dish. Grease the pie dish and lay the dough in the pie dish and form. Place back in the fridge for a few minutes to cool.
