Teriyaki Stir Fry with Bachman’s Japanese Barbecue Chicken

I made this recipe up as I went, but it turned into such a delicious meal and left my husband and I wanting more! That being said, this recipe definitely has some play room. Plus, the chicken is cooked in the air fryer, which eliminates some greasy clean up!

Prep time: 10 minutes

Cook time: 30 minutes

Ingredients:

  • 2 cups cooked white rice (I always recommend using day old leftover cooked rice)
  • 2 tbsp vegetable oil
  • 1 egg
  • 1/2 large white onion, chopped finely
  • bag of frozen vegetables
  • 1 tbsp Mirin (I use the Mizkan brand), Soy Sauce, and Teriyaki sauce (I use the Kikkoman brand for both the Soy Sauce and Teriyaki)
  • 1 pack of chicken breast tenderloins, boneless and skinless
  • 1 tsp garlic powder and onion powder
  • 1/2 tsp pepper (opt out of salt because of the Soy Sauce)
  • 1/2 cup Bachan’s Japanese Barbecue sauce
  • non-stick cooking spray

Begin by adding the vegetable oil and chopped onion into a large skillet or wok and sauté for 3 minutes. Add in the egg and frozen vegetables (I don’t add a lot of vegetables, but add as much to your liking). Scramble until the egg is fully cooked. Add in the cooked rice, Soy Sauce, and Mirin. Stir together until mixed. Fry on medium-low for 15-20 minutes, stirring occasionally.

Next, preheat your air fryer to 375 degrees. Cut the chicken tenderloins into 1 inch pieces. Season with the garlic powder, onion powder, and pepper. Spray the air fryer with non-stick spray (or use one of the reusable liners, but I do not have those). Place the chicken in the air fryer and cook for 10 minutes, flipping halfway through.

About 5 minutes before the rice is finished, add in the Teriyaki sauce and mix together.

After the chicken is finished cooking in the air fryer, add it into a separate large skillet and pour the Bachman’s Japanese Barbecue sauce over top. Cook on medium-low until the sauce thickens. Serve.

Additional: Drizzle Kewpie Mayonnaise on top to add a savory flavor. Serve with Teriyaki flavored seaweed (I use the Annie Chun’s brand).
