This is the best homemade potato soup recipe I have ever tried! It has such a rich and savory flavor, we can eat on it for days! Now that the weather is starting to become colder, soup season is officially in full swing, and having a signature potato soup recipe is a must have for your recipe book!

Cook time: 30-40 minutes
Servings amount: 6 servings
Ingredients:
- 5-6 strips bacon, uncooked, and cut into small pieces
- 3 tbsp butter, salted or unsalted
- 1 medium yellow onion, chopped finely
- 3 large garlic cloves, minced (eyeballing is okay)
- 1/4 cup all-purpose flour, not packed
- 2 1/2 lbs Russet potatoes (about 6 large potatoes worked), peeled and cut into 1 inch pieces
- 4 cups chicken broth
- 2 cups milk
- 2/3 cups heavy cream
- 1 1/2 tsp salt
- 1 tsp pepper
- 1/2 tsp chili powder
Begin by taking your uncooked bacon and cutting it into small pieces. I done this with cooking scissors to make the process easier. Add these to your large cooking pot and cook on medium heat until the bacon is crispy and brown (about 5-7 minutes). Remove bacon and transfer to a paper towel. Leave the bacon grease in the pot (should be about 2 tbsp, it’s okay to eyeball).
Next, add the chopped onion and butter into the same pot. Cook the onions on medium heat until they are brown and soft (about 3-5 minutes). Add the garlic and cook for about 30 more seconds. Sprinkle the flour over the ingredients in the pot and whisk together until smooth.
Add the diced potatoes into the pot along with the chicken broth, milk, heavy cream, salt, pepper, and chili powder. Mix well using either a whisk or a large spoon.
Bring to a boil and allow the potatoes to cook until they are tender when pierced with a fork (about 13-17 minutes). Reduce the heat to low. Use a potato masher to mash about half of the potatoes in the pot (optional, remove about half of the soup and transfer to a blender to mash, it was just easier and less messy to mash in the pot). Does not have to be perfect, just estimate about half and mash with the masher. Add the bacon pieces back to the pot. Simmer for 10 minutes. Serve!
Additional: top with some sour cream and shredded cheese to add some extra flavor.
