Truth be told, I have never ate vegetable soup before, let alone make some. While my husband was down with a cold, he requested this meal. After searching the internet and throwing together some ingredients my husband mentioned, I managed to pull together the best vegetable soup (according to him and my mother).
Plus, this recipe rids your fridge and pantry of vegetables before they expire! It is the easiest recipe I have ever tried, and a new family favorite.

Cook time: 35 minutes
Serving amount: 6 servings
Ingredients:
- 2 tbsp olive oil
- 1 lb ground beef
- 1 medium yellow onion, diced
- 2 stalks celery, diced
- 2-3 cloves garlic, minced
- 2 tsp salt
- 1/2 tsp pepper
- 3 small potatoes, peeled and cut into 1/12
- 4-6 mini carrots, diced
- 1 cup corn, peas, and diced green beans (bite sized pieces)
- 1 cup diced tomatoes
- 4 cups chicken broth
- 4 cups vegetable broth
- 2 cups water
Add your diced onions, minced garlic, and celery into a large pot with the olive oil and sauté until fragrant (4-5 minutes).
In a separate large skillet, brown the ground beef and drain the grease. Set aside. You may season the ground beef with whatever you like. For me, I used a pinch of Paprika and Slap Ya Mama, but this is optional. The soup is very flavorful anyway.
Finally, combine all the ingredients in the large pot, including the ground beef. Bring to a boil then reduce heat and simmer for 30-35 minutes or until the potatoes and ingredients are soft.
