This recipe was certainly new to my husband and I, as we don’t often eat meals with tomatoes, but this is an exception. If you love parmesan chicken and tomatoes, this recipe is perfect for you. Plus, it will have your kitchen smelling straight like Olive Garden.

Ingredients for Chicken:
- 1 cup Italian-seasoned breadcrumbs
- 2 tbsp all-purpose flour
- 1/4 tsp ground red pepper
- 4 eggs, beaten
- 8 tbsp olive oil
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
Ingredients for Tomato Sauce
- 1/2 small onion, chopped
- 4 garlic cloves, minced
- 1 tbsp olive oil
- 1 (14 1/2 oz) can diced tomatoes
- 1/4 cup red wine
- 1/4 tsp ground red pepper
- 1/2 tsp salt
- 1/4 cup chopped fresh basil
Begin by preheating your oven to 350 degrees. Combine the Italian-seasoned breadcrumbs, all-purpose flour, and ground red pepper into a large bowl and whisk together. Set aside. Crack the eggs into a separate bowl and whisk together. Set aside. Place chicken into a Ziploc bag or between two sheets of plastic wrap and flatten to about 1/4 inch thickness using a meat mallet or rolling pin.
Dip one chicken breast at a time into the egg wash. Coat evenly, then dip into the breadcrumb mixture. Dip chicken back into the egg wash and into the breadcrumb mixture once more.
Pour 2 tbsp olive oil per chicken breast into a large pot or skillet over medium heat. Cook each chicken breast 3-4 minutes on each side or until done. Once all chicken breasts are cooked, set aside.
Next, sauté chopped onions and garlic in 1 tbsp olive oil for about 3-5 minutes or until tender (if you used a large enough pot, you can use the same pot. I cooked my chicken in a large pot and added the tomato sauce into the same pot to save dishes). Add wine, tomatoes, salt, basil, and ground red pepper. Whisk together and simmer, uncovered, for 15-20 minutes, or until heated thoroughly.
Place chicken onto a large baking dish and pour tomato sauce evenly on top. Add the cheeses and bake at 350 degrees for 20 minutes.
