This recipe made my kitchen and living room smell amazing for the entire day. With spring being just a short time away, I wanted to get an early start on sweet treats that reminded me of that season. While there is still snow on the ground here, I am happy to invite pockets of spring into my home to bring warmth and excitement. This recipe is so easy and delicious.
Prep time: 10 minutes
Cook time: 50-55 minutes
Serving amount: 8-10 slices
Ingredients for the Bread:
- 3/4 cup sugar
- 1/2 cup milk
- 1/2 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 2 cups diced strawberries
- 2 tbsp all-purpose flour (for diced strawberries)
Ingredients for the Glaze:
- 2 cups powdered sugar
- 2 tbsp melted butter
- 1/2 cup diced strawberries
- 1/2 tsp vanilla
- 1-2 tbsp milk
Begin by preheating your oven to 350 degrees. In a medium sized mixing bowl, combine sugar, milk, vegetable oil, egg, and vanilla extract. Whisk together until thoroughly mixed. Add in the salt and baking powder and mix together well. Next, slowly add in flour while continuously mixing.
Take the diced strawberries and add the 2 tbsp flour. Shake until strawberries are fully covered. Add this to the batter and gently combine.
Pour the batter into a 9×5 greased loaf pan. Set in the oven for 50-55 minutes or until a toothpick comes out clean.
While waiting, combine all the ingredients in a medium sized mixing bowl for the glaze. Start by only adding 1 tbsp of milk at a time to prevent the glaze from becoming too runny.
Once the bread is finished, allow 10-15 minutes to cool before removing from the pan. Drizzle with the glaze and serve.
