Meatball Subs

I can guarantee I’ll be making this meal again, probably next week. I have never had a meatball sub before, but my husband loves them. Needless to say that this recipe is a new household favorite. Plus, it’s quick and super easy to make.

Prep time: 15 minutes

Cook time: 25 minutes

Serving amount: 4 servings

Ingredients:

  • 1 lb ground beef
  • 1/2 cup Italian bread crumbs
  • 2 tbsp grated Parmesan
  • 1 egg
  • 1/4 cup diced onions
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 cups marinara
  • 4 sub rolls
  • 1 1/2 cups shredded mozzarella

Begin by preheating your oven to 350 degrees. Next, in a large bowl, thoroughly combine ground beef, Italian breadcrumbs, Parmesan cheese, egg, diced onions, and all the seasonings. Roll into 1-inch meatballs.

Using a large skillet over medium heat, brown the meatballs on all sides. Remove meatballs, drain excess grease, then add the meatballs back into the pan with marinara sauce (I used meat flavored Prego, but any meatless pasta sauce or marinara sauce will work). Simmer for 5 minutes or until sauce is heated through.

Assemble the subs by adding 4-5 meatballs per sub and topping with the cheeses of your choice (I cut slices of provolone in half and also added shredded mozzarella). Place in the oven to bake at 350 for 4-6 minutes, or until cheese is completely melted.

Additional: garnish with chopped parsley and Parmesan cheese.
