BBQ Chicken Grilled Cheese Sandwiches with Garlic Bread

This recipe is a strange but delicious combination of two of my favorite things: grilled cheese sandwiches and bbq chicken. While it was something new for my husband and myself to try, it certainly did not disappoint. It is super easy to make, and adds a little bit of spice to an average and traditionally boring recipe.

Prep time: 20 minutes

Cook time: 15-20 minutes

Serving amount: 4 servings

Ingredients for bbq chicken:

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 1 tbsp minced garlic
  • 2 cups shredded chicken (I used rotisserie for easier cleanup)
  • 1/2 tsp paprika
  • 1 cup bbq sauce of choice (I used Stubb’s Sticky Sweet)
  • 1 tsp Worcestershire sauce
  • 8 slices cheese of choice (I used provolone, it was all I had on hand)

Ingredients for garlic bread:

  • 6 tbsp butter, melted
  • 1/2 tbsp minced garlic
  • 2 tsp minced parsley
  • 8 slices sourdough bread

Add oil to a large skilled over medium heat and add onions. Cook until soft, about 3-4 minutes. Add minced garlic until fragrant, about 30 seconds. Next, add the rest of the ingredients for the chicken, minus the cheese (save for sandwich assembly). Mix together well and cook over medium heat until heated thoroughly.

Next, mix all the ingredients for the garlic bread in a small bowl. Brush butter mixture on one side of each piece of bread. Flip over half of the bread slices (4), and add cheese. Add bbq chicken on top of the cheese, and add another slice of cheese on top of the bbq. Top with piece of bread with both butter sides exposed (bread, cheese, bbq chicken, cheese, bread). Cook each side of the sandwich for 3-4 minutes on medium-low heat, or until golden brown. Serve.
