Pretzel Bites with Beer Cheese

Whether you’re serving this as an appetizer or side dish, everyone is going to love this treat. It’s perfect for game days or simply adding a little spice to a weekday meal. I served this with a pizza and meatball appetizers, and the whole meal was perfect. Plus, it’s quick and easy!

Ingredients for pretzel bites:

  • 1 can of canned biscuits
  • 1 egg
  • kosher salt

Ingredients for beer cheese:

  • 3 tbsp butter
  • 3 tbsp all purpose flour
  • 1/2 cup lager beer
  • 1 cup whole milk (heavy cream can be used as a substitute)
  • 1 tsp dijon mustard
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 3 cups shredded cheddar cheese
  • salt and pepper to taste

Begin by preheating your oven to 375 degrees. Take the canned biscuits and roll them out, cutting them into bite sized pieces (I cut mine into fourths). Next, bring some water to a boil in a large pot and add some baking soda. Drop each of the pieces into the water and leave until they begin to float (about 10-15 seconds). Transfer them to a large baking sheet that has been sprayed with non-stick spray and brush with the egg wash. Sprinkle with salt and place in the oven for 20-25 minutes.

While the bites are baking, melt the butter in another pot (rinse out the one you just used to save dishes) over medium heat. Once fully melted, add flour and whisk to combine, eliminating any clumps. Pour in the beer first and then milk while continuing to whisk. Cook this over medium heat for just a few minutes until it begins to thicken. Add the remaining ingredients EXCEPT for the cheese and whisk together. After this is combined, slowly whisk in about a handful of cheese at a time until totally smooth. Serve!
