Buffalo Chicken with Rice

This quick and easy recipe will leave your kitchen smelling amazing and you and your family happy. It doesn’t require many ingredients and you can leave it marinating all day until you’re ready to cook. I ate this meal as it is, but my husband fried up a couple tortillas, shredded the chicken, and made his own little tacos. So, this recipe certainly has some play room.

Prep time: 20 minutes (additional time contingent upon marinating hours)

Cook time: 30 minutes

Ingredients for marinade

  • 1/2 cup Frank’s Red Hot Wings Buffalo sauce
  • 1/2 tbsp lime juice
  • 2 tbsp minced garlic
  • 1 tsp chili and onion powder
  • 1/2 tsp ground black pepper, salt, and paprika

Ingredients

  • 2 chicken breasts, sliced in half (4 pieces total)
  • 1 sweet bell pepper, sliced
  • 1 sweet onion, sliced
  • 2-4 tbsp olive oil
  • 2 cups uncooked white rice

For the marinade, add all the ingredients listed above to a gallon sized Ziploc bag, mixed well, and place in the fridge for at least 1 hour, but you can marinate all day if needed.

Begin by cooking your rice. Rinse your rice in a strainer and add both cups to a large pot with 4 cups of water. Bring to a boil, then cover and reduce heat. Continue to cook for 13-15 minutes. Once the water in the pot is absorbed, remove from heat and allow to sit for about 10 more minutes, still covered.

While your rice is cooking, add 2 tablespoons of olive oil to a large pan and save the rest for later. Add in sliced onions and bell peppers over medium-high heat. Sauté for a few moments and then add two slices of the marinated chicken breast. Stir the vegetables occasionally while cooking the chicken for 4-5 minutes on each side, or until internal temperature reaches 165 degrees in the thickest part.

Once vegetables are done cooking, remove and set aside. Add remaining olive oil to the pan and repeat process with remaining chicken breast pieces. Serve!

Additional: Do what my husband did and fry up some mini tortillas to make some delicious tacos, or serve as is (the nutrition information does not include tortillas). You may also flatten out the breasts instead of cutting them in half.
